Mermaid Magic Smoothie Bowls

For those days your fantasies need a boost, try this nourishing bowl of blue or purple magic. Blue spirulina is derived from blue-green algae. It is an excellent source of antioxidants & vitamins, improves digestion, aids in inflammation, may help support a healthy immune system and there is no algae taste. Other perks: vegan, soy free, gluten free, paleo and dairy free.

TOTAL TIME: 10 MINS

 

INGREDIENTS:

Blue Bowl:

  • 2 frozen bananas
  • 1 cup frozen mango
  • 1 cup frozen pineapple
  • 1 tsp of Unicorn Superfoods Blue Spirulina
  • 1/2 cup of coconut water (may need more, add between mixes until you reach desired consistency)
  • 1/2 cup of coconut or oat milk

Toppings:

  • 1 kiwi, balled
  • 1 dragon fruit, balled
  • Coconut flakes

Purple Bowl:

  • 2 frozen bananas
  • 1 cup frozen mango
  • 1 cup frozen purple dragon fruit or a frozen pitaya pack
  • 1 tsp of Unicorn Superfoods Blue Spirulina, optional (if you do not add, you will have a beautiful pink bowl instead)
  • 1/2 cup of coconut water (may need more, add between mixes until you reach desired consistency)
  • 1/2 cup of coconut or oat milk

Toppings:

INSTRUCTIONS:

  1. Put frozen fruit into Ninja Blender or Vitamix and pulse for 15 seconds.
  2. Add coconut water and then pulse for additional 15 seconds.
  3. Add coconut or oat milk, pulse for additional 15 seconds. You may need to occasionally scrape down the sides, depending on your blender.
  4. Add blue spirulina and blend for additional 15-30 seconds or longer. You want to keep it as thick as possible so don't over blend it into a liquid.
  5. Scoop out smoothie into Coconut Bowl (the true way to consume smoothie bowls).
  6. Add toppings.
  7. Turn into the mermaid that you wish to be.
